Avocados ... love 'em or leave 'em?

Avocados are absolutely one of my most favorite things to eat. I can't believe it took me so long to figure this out. I started eating them a bit when I was pregnant. Can you imagine that growing up I never really tasted one? Let's just say guacamole wasn't exactly on the menu in my house! But as I got older and started loving them, I realized that I absolutely can't live without them. Which kind of sucks, since they're so d@mned expensive.

When I was pregnant I craved them. I don't even know how it happened, I just knew I wanted avocado. And yet I still didn't really buy them right away, instead I begged my husband to get me to a Mexican restaurant. And then suddenly I realized that I could purchase them! What a revelation!


So I started buying them weekly. And eating a ton of them! And then when my daughter was born and old enough to try "real" foods, avocados were one of the first things I started her on. And she loved (and loves!) them, too.


A while back I was trying to think of some recipes, and came across a simple avocado on buttered toast recipe. It struck me as a little bit odd, but I wanted to eat them for breakfast, so I gave it a whirl. Yum! SO good. Now I don't need an excuse, my daughter and I simply eat them whatever time of day we want, with whatever we want. Yesterday I put some on my grape-chicken-salad sandwich, while she ate the other part of the half w. a spoon. This morning we've shared an unevenly cut half, but the other half won't stay for long. We're bound to bust that pit out of it eventually!


So, share your fave avocado recipes if you have them, otherwise, find a somewhat soft (which equals ripe) one and split it open. You won't regret it! Enjoy!
