Recipe: Hash Brown Casserole

So I'm making dinner tonight and I figured I haven't posted today yet, and I haven't done a Lazy Mom recipe in a while, so here ya go. It's not exactly the quickest, and requires a tad more than the usual lazy mom might do, but I'm good w/ it, and you could be, too!

Lazy Mom's Hash Brown Casserole

* 1 lb ground meat (I chose Turkey)

* 1 bag ('ish') of frozen hash browns (you can use tater tots if you prefer)

* 1 can cream of something soup (chicken here)

* 1/2 c milk

* 1-2 c shredded cheese (any kind)

* breadcrumbs to top (optional)

Brown meat in a skillet. Once done, combine meat, soup, milk, cheese and hashbrowns in mixing bowl. If you use tater tots, leave some to top off baking dish.

Place in a deep baking dish and cook at 350* for 30-40 minutes, or until brown and bubbly. I added breadcrumbs to the top of mine, and my timer is currently telling me I need to check them, so that's all.

p.s. Use breadcrumbs sparingly, because I think I just covered the dish with too much of them, and therefore they're going to take forever to actually brown. Boo!

  1. Almost like my recipe, except I don't use bread crumbs. Love this!

  2. If you want bread crumbs to brown a bit faster next time just hit them with a shot of Pam before they go in the oven. That's my trick!

  3. this sounds quick and easy. I'm definitely down for more of THAT in this house.

  4. My BFF since Kindergarten was JUST telling me about this when she was here this weekend! She was helping me come up with stuff I could throw together quickly now that I'm back to work... can't wait to try it!

  5. I've never made this because my family isn't big on casseroles. (Although I love casseroles!)

    I just threw some frozen chicken breasts in the crock pot with salsa, black beans, corn, and taco seasoning. I'm going to shred it up for tacos.

  6. Just bought some hash browns at the store today...guess what I'm making!!!!

    Lots of yummy love,

  7. I love both hash brown casserole and easy/lazy recipes, so I'm copying this one down and can't wait to use it soon. It sounds delicious!

  8. Looks delicious! I love hashbrown casserole with tater tots. Reminds me of my mom's recipe.
